Protein Mini Muffins

I always say I am making these for my son to eat but when he's not looking, I am devouring them!! They have never made it until my hubby gets home from work so he's never even had a chance to try them! I love the simple ingredients in these mini muffins plus all the benefits they have in the ingredients. I'll have to make another batch tomorrow because today's didn't last long! 


Here is the recipe! 

1 ripe smashed banana
1 egg, beaten
2-3 scoops of chocolate protein *
1 tsp baking powder
Mini chocolate chips

Mix batter together until wet.
Grease mini muffin cups and pour in.
Bake at 325 for around 12 minutes and knife comes out clean.
Makes 12 (so double it right away!!) 

*I prefer to use Shaklee's Life Energizing Shake because it contains omegas and probiotics PLUS it can stand the heat when you bake with it! This protein doesn't break down so you are getting what you need even after cooking with it!
